
The Care-Free Cooking team is excited to welcome all of you! We are passionate about the development and research we have uncovered for those who must confront issues with food allergies and food intolerances.
During this journey of discovery, we were amazed by the realization that though millions of us are dealing with dietary issues, there are still millions who have no idea they have a need to change up their food choices!
Physicians, often miss the allergy/intolerance connection when patients experience symptoms that seem to be coming from more traditionally understood ailments. The remarkable news is how quickly symptoms can clear up when the food choices are altered. Our question became, "How do we spread the word to all those who feel isolated by these conditions. And how do we help innovate the solutions in their lives?"
Our answer is to focus on the Possibilities and not the Problem.
Primarily because as we looked into alternate recipes and ingredients, we were impressed how a little imagination can go a long way in creating a bounty of meal choices. We know you will absolutely love the healthy, delicious menus we create to please the palates of your family and friends!
Diligently, we've explored the personal lifestyle and meal planning issues families, singles and the elderly face on a daily basis. It seems a good place to be too because when a diagnosis finally comes in and its food related, the patient is given a piece of paper with a list of foods to avoid and that's pretty much it! All the lifestyle issues are left up to the individual to figure out.
We had to take the journey ourselves through real life experiences.
Our inspiration truly was Jodi Bentley who lives in Virginia with her husband and three daughters. Jodi's task was daunting. One daughter developed peanut allergies and another Celiac's . Jodi was not the cooking diva to begin with. However, she rolled up her sleeves and relentlessly connected with every available resource and blog she could find to put the SOS out to others who may face the same issues. Jodi set a standard and involved herself to help others cope and find solutions that allow their children to live normally.
Another choice we made was to find a Host who personifies a trusted friend and Mom to walk the road of discovery with. Gwenivere's blog explains it all! She has embraced this journey with enthusiasm and will lead us along the path of food enlightenment as she helps her own family deal with the life style adjustments they face with their youngest daughter who is allergic to gluten, wheat and almonds. Gwenivere's positive and practical approach as a Mom who's learning right along with you is enhanced by her warmth and enthusiasm.
Our efforts have been rewarded by the support of The Celiac Disease Foundation and FAAN. We will be a resource for all the research, food alerts and legislation available from these dedicated organizations.
